Our Cottage Block Shiraz is grown from twenty five year old vines planted east west to shade from the hot sun and cooled by the gully breeze. We picked early for freshness on the twenty first of February, wild fermented on forty percent whole bunch for ten days to extract all residual sugars before a long basket press. The juice then rested in our shaved French hogsheads for secondary fermentation and subtle aging for twelve months.
Dark fruits, easy tannins with a peppery finish. Hands on all the way, but not without a professional winemaker for guidance. Thanks Ben.
